A few months ago, I had the pleasure of attending the inaugural Grandoozy Festival in Denver, Colorado. It was basically like Coachella lite. The three-day festival featured non-stop music and art installations, with a headliner each night. The highlight for me was exploring the city of Denver during the day and watching Kendrick Lamar and Stevie Wonder perform at night. In addition to the music and local fare, Denver has some great restaurants.
One restaurant in particular that stood out was a local eatery called Denver Biscuit Company. There was one right around the corner from our Airbnb, and I have to admit that we went there twice during our four-day trip. As the name suggests, the restaurant is known for its biscuit sandwiches. They are sooo good! Grandoozy was in September, and I am still thinking about those biscuits! The first time I went I had The DBC Club, which is basically a chicken club sandwich on a biscuit. On my second round, I had The Schooner; a fried catfish biscuit delight. I really want to recreate these dishes at home, but I know they will not be the.
