Quarantine Breakfast Taco Recipes

One plus about social distancing and the influx of remote offices during this pandemic is not having to get up early for your morning commute. This means a little more time in bed, and the introduction of what my husband likes to call, “a leisurely breakfast.” Now is a great time to work on those budding culinary skills and add some recipes to your book.


Since breakfast is the most important meal of the day (and who doesn’t love tacos), here are some breakfast taco recipes from BuzzFeed.com that look absolutely delicious. Chorizo, cheddar (non-dairy for me), and tortilla chips? More, please! I am seriously drooling thinking about all of them. What breakfast taco combination are you excited to try first?

HOW TO MAKE IT

Cook sliced chorizo (the fresh Mexican kind, not the dried Spanish variety) in a medium skillet over medium-high heat until it’s brown and crispy, about 4 minutes.


Add 2 whisked eggs, season with salt and pepper, and cook, stirring, until the eggs are just set, about 2 minutes.


Add a handful of shredded cheddar cheese and stir to combine. Pile onto a warm tortilla and top with crushed tortilla chips and chopped cilantro.
